Improving Your Diet and Eating Habits with Dr. Jay Ashley
On today's episode we have a clip from an interview that I did with Dr. Jay Ashley about changing eating habits. While we talk about Dr. Jay's journey going vegan I think this conversation applies to anyone working to change the eating habits they've had in the past that are no longer serving them!

Worlds Greatest Brownies
Dry Ingredients
2 Cups flour
Half cup of cocoa
1 tsp salt
1.5 tsp baking soda
Wet Ingredients
1/2 Cup of Oil
1.5 Cups of sugar
2 tsp of vanilla
2 cups of shredded zucchini
Directions
1. Mix together dry ingredients and set aside.
2. Mix wet ingredients together til blended.
3. Combine dry and wet mixtures together until smooth and thick. Add milk or water as needed.
4. Optional. Add nuts or chocolate chips as desired.
Bake on 350 for 30-40 min.
This recipe can be as healthy as possible by using coconut or date sugar. I also use gluten free flour. Some prefer applesauce instead of oil but I’m not that brave.
Shmurgers by Dr. Jay
Ingredients
20oz of diced portabella mushrooms or roughly 3-4 large portabella caps
1 cup cooked quinoa
1 diced purple onion
2 diced colorful bell peppers
1/2 can of cooked brown lintels
Dry rub, steak or burger seasoning of choice
Chickpea flour
Instructions
1. Season then sauté all veggies until tender.
2. Combine veggies, quinoa and lentils by hand until well mixed. They should smell like burger patties by now!
3. Add chickpea flour to stiffen the patties. They should feel just like your favorite burger patties at this point.
4. Lay them on wax paper and refrigerate for 30 minutes or even freeze for later. Cook them in a hot oiled cast iron skillet on medium high or bake at 350 degrees for 15-18 minutes.
5. Tips. Letting the mixture rest in the fridge allows for the flavors to marry and some of the water to evaporate. This ensures a nice tight patty when cooked.
